I just recently started making these Breakfast Crepes, and let me tell you, I’m in love!

They provide you just the right balance between healthy, fast and “treat”…they’re a parent’s dream come true!

Plus, you have the added bonus of being able to stuff them full of pretty much whatever you want, so the kids can get creative with them!

Our usual fillings are mainly berries and cream cheese for Maddie, and my hubby prefers to go the “BLT” route.

I’ll be honest, the first time I made these I was a little concerned about the number of eggs (I’ve revised it a little!), but they don’t end up tasting eggy! It honestly is just like a really thin pancake!

Play around with the fillings and let me know what ends up being your favorite!

*Note: If you would prefer more of a¬†“BLT” crepe¬†instead of the sweet fillings, then omit the vanilla and cinnamon, and replace with a pinch of garlic powder instead!

Healthy Homemade Breakfast Crepes

Ingredients

  • 3 tbsp almond flour (ground almonds)
  • 2 tbsp arrowroot powder
  • pinch of salt
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 5 eggs
  • butter

Instructions

  1. If you don't have almond flour, grind up just under 3 tbsp raw almonds.
  2. Add all ingredients to a blender and mix well.
  3. Melt about 1/2 tsp butter in pan, pour in about 5-6 tbsp batter and spread thin with spoon.
  4. Flip when cooked around edges (about 3-4 minutes, it will flip really easily)
  5. Cook 2-3 minutes on other side, then remove to a plate.
  6. Repeat with remaining batter.
  7. Serve warm,with filling of your choice.
