I just recently started making these Breakfast Crepes, and let me tell you, I’m in love!
They provide you just the right balance between healthy, fast and “treat”…they’re a parent’s dream come true!
Plus, you have the added bonus of being able to stuff them full of pretty much whatever you want, so the kids can get creative with them!
Our usual fillings are mainly berries and cream cheese for Maddie, and my hubby prefers to go the “BLT” route.
I’ll be honest, the first time I made these I was a little concerned about the number of eggs (I’ve revised it a little!), but they don’t end up tasting eggy! It honestly is just like a really thin pancake!
Play around with the fillings and let me know what ends up being your favorite!
*Note: If you would prefer more of a “BLT” crepe instead of the sweet fillings, then omit the vanilla and cinnamon, and replace with a pinch of garlic powder instead!
